Spicy Bell Pepper Salad

My local Farmer’s Market had a sale on red, yellow and orange green peppers, so I had an abundance at my disposal. What resulted was a lovely colorful salad that is refreshing, filling and filled with flavor!

Let us begin!

For the salad, you will need:

– 1 yellow pepper

– 1 orange bell pepper

– 1/2 a large cucumber or 1 small cucumber

– 2 organic tomatoes

– 1 small handful chopped cilantro

– 1 tbsp. hemp seeds

For my superfood avocado turmeric dressing, you will need:

– 1 avocado

– juice of 1 small lime

– 1 to 2 tbsp. nutritional yeast

– 1/2 tsp turmeric

– dash of cayenne

Chop up all the salad ingredients and place into a large bowl. Slice the avocado in half, put into a small bowl, then mash up with the rest of the ingredients:2013-11-07_16-22-20_845

Once the salad is tossed with the dressing, top with the hemp seeds, and, if you so desire, finish it off with a bit of valentina sauce on the top. This is my favorite hot spicy Mexican hot sauce, and it adds a great kick to the salad!

Mix together, then eat up! This salad is so filling and delightful!
