Coconut Banana Smoothie Bowl!

Smoothie bowls are my favorite lunch during the hot summer months. And there are so many variations you can do with them! If you have frozen bananas, you are pretty much set for a base, and then you can just throw in whatever you want! This smoothie bowl is so simple, made with only a few ingredients, but very satisfying!  It’s like eating coconut ice cream!

Let us begin!

You will need:

  • 4 frozen bananas
  • 2 cups homemade coconut milk (to see how to make your own, checkout my recipe here)
  • 2 tbsp coconut flakes
  • 1 tbsp maca powder
  • 1 tsp vanilla
  • Optional: 1 scoop of your choice vanilla vegan protein powder

Put all the ingredients into your high powered blender, and blend on high until everything is fully mixed. You may need to stop and start the blender from time to time to scrape the sides and push the mixture around.

Pour into a bowl, top with goji berries and more coconut flakes, then eat! You can top this bowl with anything you want really: more fresh fruit, nuts, dried fruit, hemp seeds, you name it, the choices are endless!
